Indulge in a savory, high-protein classic featuring tender, thin-sliced chicken breast, perfectly caramelized yellow onions, and crisp bell peppers. Topped with sharp, premium melted provolone and served on sturdy hoagie rolls, this recipe focuses on professional searing techniques to lock in juices for the perfect bite. It is a quick, restaurant-quality American favorite that achieves a satisfying balance of textures and flavors without the need for complex sauces.

Ingredients

Scale

1.5 lbs (680g) Chicken Breast, sliced very thin against the grain
1 medium Bell Pepper, sliced
1 large Yellow Onion, sliced
4-8 slices Aged Provolone Cheese
4 Hoagie Rolls
2 tbsp Grapeseed Oil
1 tsp Kosher Salt

Instructions

Place chicken breast in the freezer briefly until firm, then slice against the grain into very thin strips.
Preheat a large skillet or flat-top griddle over high heat and add the grapeseed oil.
Add the sliced chicken to the hot skillet, searing quickly until golden brown and cooked through.
Remove chicken and set aside, then add the bell peppers and onions to the pan.
Sauté the vegetables until they are softened and caramelized, about 5-7 minutes.
Return the chicken to the pan and toss with the vegetables until combined and evenly seasoned with salt.
Divide the mixture into four portions and top each with slices of provolone cheese.
Allow the cheese to melt fully over the mixture, using a lid or heat-resistant cover to trap steam.
Toast the hoagie rolls lightly, place each portion into a roll, and serve immediately.

Notes

Slicing the chicken while partially frozen is the secret to achieving consistent, paper-thin strips. Ensure your pan is very hot before adding the chicken to initiate the Maillard reaction immediately. Use aged provolone for the best stretch and bold flavor profile.
