A refreshing and protein-rich Greek-inspired salad with seasoned chicken, tangy tzatziki, crisp cucumber, and fresh dill. Perfect for a healthy lunch or on-the-go meal.

Ingredients

Grilled Chicken Breast, 2 pieces (approx. 6 oz)
Tzatziki Sauce, 3 tablespoons
Cucumber, 1 medium, diced
Fresh Dill, 1 tablespoon, chopped
Lettuce, 4 cups, chopped
Red Onion, 1 small, thinly sliced
Olive Oil, 1 teaspoon

Instructions

Cook the chicken breasts in a skillet over medium heat until fully cooked through, approximately 6-7 minutes per side. Set aside and let cool before dicing into small pieces.
In a large mixing bowl, combine the diced chicken with tzatziki sauce. Mix well so that every piece of chicken is coated.
Add the chopped lettuce and diced cucumber. Stir gently to blend without overmixing to preserve texture.
Fold in the chopped dill and sliced red onion. Optionally, drizzle the olive oil over the mixture to bring more flavor and moisture.
Taste and adjust seasoning with salt and pepper if needed. Serve fresh or chilled based on serving preference.

Buy pre-diced tzatziki sauce or make it in advance to streamline preparation.
Grill or pan-sear the chicken for a smoky flavor. Substitute rotisserie chicken if desired.
