A refreshing summer salad pairing strawberries and watermelon with zesty lemon, salty feta, and cooling mint. Vibrant textures and balanced flavors create a light, satisfying dish perfect for warm weather.

Ingredients

2 cups strawberries, sliced (1214 medium)
2 cups watermelon, cubed
2 cups English cucumber, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh mint, chopped
2 tablespoons extra-virgin olive oil
1 tablespoon lemon juice

Instructions

Pat strawberries dry with paper towels
Peel and deseed cucumbers; slice thinly
Cube watermelon and chill briefly
In large bowl, combine strawberries, watermelon, and cucumber
Toss with olive oil and lemon juice
Top with crumbled feta and fresh mint just before serving
Season with salt to taste (omit if feta is heavily salted)

Notes

For vegan option: substitute feta with 35g nutritional yeast or 1/4 cup crumbled tofu with herbs
Mint may be replaced with basil or dill
Avoid over-handling ingredients to preserve texture
Use seedless watermelon for convenience
