Chicken breasts
4 medium, boneless and skinless (6 oz each)
Fresh spinach
4 cups loosely packed
Cream cheese
2 cups, softened
Mozzarella cheese
1 cup, shredded
Garlic
2 cloves, minced
Seasoning
1 tsp salt
1 tsp black pepper
1 tsp Italian herbs
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
Clean the spinach thoroughly and set it aside. In a separate bowl, blend the cream cheese with minced garlic, salt, pepper, and Italian herbs until smooth.
Pat each chicken breast dry and butterfly them (cut horizontally to open flat shape). Be careful not to cut through the base of the breast.
Distribute 1 cup of spinach in the center of each flattened chicken breast. Spoon the cream cheese mixture over the spinach, then sprinkle with mozzarella cheese.
Fold the chicken breasts over the filling to enclose it completely. Secure with toothpicks if needed.
Place on the prepared baking sheet and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F.
