This robust and flavor-packed dish is a fusion of Cajun and Tex-Mex influences. High-heat searing of cubed chicken breasts creates a beautiful crust, which is then combined with a fragrant, smoky chipotle cream base. Finished with al dente fettuccine, this meal hits all the right notes of heat, creaminess, and umami, making it a perfect restaurant-quality dinner for any night of the week.

Ingredients

Scale

1.5 lbs (680g) Chicken Breast, boneless and skinless, cubed
8 oz (225g) Fettuccine Pasta
1 tbsp Cajun Seasoning
1 tbsp Chipotle Paste
1/2 cup (120ml) Heavy Cream
2 tbsp Extra Virgin Olive Oil
3 cloves Garlic, minced

Instructions

Bring a large pot of salted water to a boil and cook the fettuccine until al dente.
While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
Season the cubed chicken with the Cajun spice blend.
Add the chicken to the hot skillet and sear until golden and cooked through, ensuring a good crust forms.
Lower the heat and add the minced garlic and chipotle paste to the pan, stirring to bloom the aromatics.
Pour in the heavy cream, deglazing the pan by scraping up any browned bits.
Simmer the sauce for 2-3 minutes until it slightly thickens.
Drain the pasta and toss it directly into the skillet with the sauce until every strand is evenly coated.
Serve immediately while warm.

Notes

Ensure chicken cubes are cut to a uniform one-inch size for even cooking. For extra flavor, you can garnish with fresh parsley or chopped green onions. Store leftovers in an airtight container for up to 3 days.
