A comforting and hearty American-style main dish that layers thinly sliced Russet potatoes, savory ground beef, and sweet corn in a tangy barbecue glaze. 1 lb (454g) Ground Beef (85/15 lean-to-fat)
3 Medium Russet Potatoes, sliced 1/4 inch thick
1 cup (150g) Frozen Corn, thawed
1 cup (240ml) Barbecue Sauce (alcohol-free/pork-free)
1.5 cups (170g) Sharp Cheddar cheese, shredded
1 tsp Smoked Paprika

Instructions

Heat a large skillet over medium-high heat and brown the ground beef, breaking it into small crumbles.
Drain any excess fat from the skillet.
Layer the sliced potatoes at the bottom of the slow cooker insert.
Spread the browned ground beef evenly over the potato layer.
Sprinkle the smoked paprika over the beef and top with the thawed corn.
Pour the barbecue sauce evenly over the top of the ingredients.
Cover and cook on low for 6 hours until the potatoes are fork-tender.
Remove the lid, sprinkle the shredded cheddar cheese over the top, and cover for another 10 minutes until the cheese is melted.

Notes

Ensure your barbecue sauce is free of pork products and alcohol. You can adjust the spice level by adding a pinch of chili powder or cayenne pepper. Leftovers store well in an airtight container for up to 3 days.
