Ingredients

Scale

1 lb (450g) Ground Beef (85/15 ratio)
1 cup (200g) Long Grain White Rice
2 cups (475ml) Low-sodium Beef Broth
1 tbsp Cajun Seasoning
1 cup (115g) Freshly grated Cheddar Cheese
1 tsp Smoked Paprika

Instructions

Place a large, deep-sided skillet over medium-high heat.
Add ground beef to the skillet and brown thoroughly, breaking it into smaller crumbles.
Stir in the Cajun seasoning and smoked paprika until the meat is evenly coated and aromatic.
Add the dry rice to the skillet and stir for 1-2 minutes to toast the grains slightly with the meat fat.
Pour in the beef broth and bring the mixture to a gentle boil.
Reduce heat to low, cover the skillet with a tight-fitting lid, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
Remove from heat, fold in the grated cheddar cheese until melted and smooth.
Let sit covered for 2 minutes before serving.

Notes

For the best texture and melting profile, use freshly grated cheddar cheese rather than pre-grated packets which contain anti-caking agents. Ensure you do not use instant rice as it will result in an undesirable, mushy texture. Add fresh green onions or parsley as a garnish for extra freshness.
