This rich and subtly spicy casserole brings together succulent tender chicken, creamy cream cheese, fresh jalapenos, and melted cheddar crowned with savory turkey bacon for a deliciously low-carb, high-flavor keto dish.

2 lbs (907g) boneless, skinless chicken breasts (or thighs)
8 oz (227g) full-fat cream cheese, softened
2 medium jalapeno peppers, diced, seeds removed to reduce heat
1 cup (113g) freshly shredded sharp cheddar cheese
2 cups (64g) finely crumbled turkey bacon
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dry mustard
1/4 teaspoon onion powder

Instructions

Preheat oven to 375°F (190°C)
Pat chicken breasts dry and season both sides with garlic powder, smoked paprika, salt, pepper, and dry mustard
In a bowl, mix together cream cheese, diced jalapeno, onion powder, and half the shredded cheddar until well combined
Place chicken breasts in a greased 9×13-inch baking dish
Spoon the cream cheese jalapeno mixture evenly over each chicken breast
Sprinkle the remaining cheddar cheese and half the turkey bacon crumbles over the top
Bake for 25 minutes, or until the chicken is fully cooked and the cheese is golden and bubbly
Garnish with remaining turkey bacon before serving

Notes

Chicken thighs can be used instead of breasts for a more tender and flavorful result
Remove jalapeno seeds and membranes if you prefer milder heat
Ensure internal temperature of the chicken reaches 165°F
