Achieve restaurant-quality tender shredded chicken in minutes with this efficient Instant Pot recipe. Using salsa verde as a poaching liquid creates an acidic braise that breaks down muscle fibers quickly, locking in moisture and flavor. These tacos are a perfect weeknight meal, delivering a vibrant, zesty Mexican-inspired flavor profile without the long cook times of traditional braising. Simply prep, pressurize, and serve in warm tortillas for a healthy, protein-packed dinner.

Ingredients

Scale

2 lbs (907g) boneless skinless chicken breasts
1 cup (240ml) salsa verde
8 small corn or flour tortillas
1/4 cup (15g) fresh cilantro, chopped
Sea salt to taste
Black pepper to taste

Instructions

Rinse chicken breasts and pat dry with paper towels.
Season chicken pieces generously on all sides with sea salt and cracked black pepper.
Place the seasoned chicken into the base of the Instant Pot.
Pour the salsa verde evenly over the chicken breasts.
Secure the lid and set the steam release valve to the sealing position.
Select Manual or Pressure Cook on High for 15 minutes.
Once the timer expires, allow for a natural pressure release for 5 minutes before venting the remaining steam.
Carefully remove the chicken, shred it using two forks, and return it to the sauce to toss.
Warm the tortillas and serve the shredded chicken inside, topping with fresh cilantro.

Notes

Ensure your salsa verde does not contain hidden alcohols or vinegars derived from spirits to maintain dietary compliance. For extra flavor, toast your tortillas over an open flame before serving to enhance their nutty aroma.
