These air fryer quesadillas are a high-protein, efficient meal solution that balances savory ground beef with refreshing, shredded zucchini. 1 lb Ground Beef (85/15 fat ratio)
1 cup Shredded Zucchini (moisture squeezed out)
1 cup Sharp Cheddar Cheese, shredded
4 Large Flour Tortillas
1 tsp Smoked Paprika
1/2 tsp Salt
1/4 tsp Black Pepper

Instructions

Preheat your air fryer to 370°F (190°C).
Heat a heavy-bottomed skillet over medium-high heat and cook the ground beef until browned.
Drain the excess fat from the skillet.
Add the shredded zucchini and smoked paprika to the beef, stirring for 2-3 minutes until zucchini is tender.
Season the mixture with salt and pepper to taste.
Place a generous portion of the beef and zucchini mixture on one half of each tortilla, top with a sprinkle of cheddar cheese, and fold to seal.
Place the assembled quesadillas in the air fryer basket in a single layer.
Air fry for 5-7 minutes, flipping halfway through, until the exterior is golden and crisp and the cheese is fully melted.

Notes

Ensure you squeeze out the zucchini very well using a tea towel or paper towels to prevent the tortillas from softening. If you prefer extra crunch, lightly mist the outside of the tortillas with cooking spray before air frying. Store leftovers in an airtight container for up to 3 days and reheat in the air fryer for best results.
