Restaurant-style crispy chicken wings with a tangy, sweet-hot honey mustard glaze. Achieve golden-brown skin via dry-brining and precise oven temps, then coat with a sticky spice-balanced sauce. Perfect for casual gatherings or spicy munchies.

Ingredients

Scale

Chicken Wings 1 kg (2.2 lbs)
Baking Powder 1 tbsp (12g)
Sea Salt 1 tsp (6g)
Unsalted Butter 1 tbsp (14g)
Honey 1/4 cup (60g)
Whole-Grain Mustard 1/4 cup (35g)
Hot Sauce 1 tbsp (16ml)

Instructions

Adjust oven racks to upper-middle position and preheat oven to 425°F
Place chicken wings on paper towels, pat thoroughly dry
Sprinkle baking powder and sea salt evenly over wings, coating both sides
Transfer wings to wire rack over baking sheet (not on parchment)
Bake for 40-45 minutes until golden and crisp, rotating sheet halfway
Meanwhile, combine butter, honey, mustard, and hot sauce in bowl
Toss hot wings in sauce (147°F internal temp) until fully glazed

Notes

For best texture, avoid using parchment paper which traps steam
Ghost pepper sauce adds concentrated heat; adjust to taste
Glaze will harden at room temperature; serve immediately with blue cheese or celery
Wing ratio: 1 kg yields ~20-24 pieces depending on split
