No reviews

A restorative and protein-rich soup that pairs tender shredded chicken with perfectly cooked long-grain rice and vibrant, aromatic citrus. This clean, nourishing dish uses a simple mirepoix base and low-sodium broth, relying on the natural starch of the rice for a silky texture. By adding fresh lemon juice at the very end, we preserve the bright acidity that makes every spoonful refreshing. Ideal for any season, this soup provides professional-grade flavor without the need for heavy thickeners or unnecessary fats.

Ingredients

Scale

1 lb (450g) shredded chicken (poached or roasted breast)
1/2 cup (100g) long-grain white rice
4 cups (1L) low-sodium chicken broth
1/4 cup (60ml) freshly squeezed lemon juice
1 cup (130g) chopped carrots

Instructions

Combine the broth and chopped carrots in a large heavy-bottomed pot over medium-high heat.
Bring the liquid to a gentle boil and reduce heat for a steady simmer.
Add the rice, ensuring it is fully submerged in the simmering liquid.
Cover partially and simmer for 20 minutes until the rice is tender.
Remove the pot from the heat source.
Stir in the shredded chicken until heated through.
Stir in the fresh lemon juice once off the heat to preserve flavor and clarity.
Serve immediately.

Notes

Ensure lemon juice is added after removing the pot from heat to prevent the citric acid from interacting with the broth proteins. You may add fresh herbs like parsley or dill as a garnish for extra aroma. Store in an airtight container for up to 3 days.
