These healthy ground beef tostadas are a quick, budget-friendly weeknight dinner that balances lean protein with vibrant, crunchy toppings. By using a precise searing technique, the beef develops a rich, savory crust that pairs perfectly with crisp corn shells, shredded lettuce, and zesty salsa for a professional-grade meal in just twenty minutes.

Ingredients

Scale

1 lb (450g) lean ground beef (90/10 ratio)
8 plain corn tostada shells
1 cup shredded iceberg or romaine lettuce
1/2 cup fresh chunky salsa
1/4 cup sour cream or Greek yogurt
2 tbsp taco seasoning (no-filler blend)

Instructions

Wash and dry the lettuce, then shred into thin ribbons.
Place the ground beef into a cold cast iron skillet.
Turn the heat to medium and cook the beef steadily without constant stirring to allow for optimal browning (Maillard reaction).
Once browned and cooked through, stir in the taco seasoning along with a splash of water if needed to coat the meat evenly.
Remove the beef from heat once the moisture has rendered out of the pan.
Assemble by layering the seasoned beef onto the tostada shells.
Top with a dollop of sour cream or Greek yogurt, a sprinkle of shredded lettuce, and a spoonful of fresh salsa.

Notes

Starting with a cold pan helps render the fat effectively, preventing the beef from steaming and ensuring a crisp, flavorful finish. Keep toppings cold to maintain the contrasting temperature profile.
