1 lb (450g) lean ground beef (90/10 ratio)
1/4 cup (60ml) alcohol-free hoisin sauce
1/2 cup (125g) water chestnuts, finely diced
1 tbsp freshly minced garlic
4 large butter lettuce leaves, washed and dried
1 tbsp avocado oil

Instructions

Place a large skillet over medium-high heat and add the avocado oil.
Once the oil is shimmering, add the ground beef in a single layer and let it sear undisturbed for 3-4 minutes to develop a crust.
Break up the meat with a wooden spoon and stir in the minced garlic, cooking until fragrant.
Add the finely diced water chestnuts to the pan and toss to combine.
Pour in the alcohol-free hoisin sauce, deglazing the pan by scraping up the browned bits, and stir until the meat is evenly coated and the sauce is slightly reduced.
Remove from heat immediately to prevent overcooking.
Spoon the beef mixture into the center of the clean butter lettuce leaves and serve immediately.

Ensure your hoisin sauce is certified alcohol-free as some varieties contain trace amounts of rice wine or cooking wine. For extra heat, add fresh red chili flakes during the sauté step.
