Juicy grilled chicken skewers with pineapple, onion, and bell pepper, glazed with a sweet pineapple-BBQ sauce. A perfect blend of smoky char and tropical sweetness.

Ingredients

4 cups skinless, boneless chicken breast, cubed
1 cup pineapple chunks (fresh or canned)
1 cup red onion, cubed
1 cup green bell pepper, cubed
1/2 cup pineapple juice (or substitute with 1 tbsp lemon juice + 1 tbsp water)
3/4 cup BBQ sauce (pork-free)
810 skewers (metal or pre-soaked wooden)

Instructions

Cube chicken breast into 1.5–2 inch pieces
Quarter pineapple horizontally and cut into 1-inch chunks
Cube red onion and green bell pepper into similar sizes
Alternate chicken, pineapple, onion, and pepper on skewers, leaving 1/2-inch space
Preheat grill to 450°F (230°C)
Lightly oil skewered ingredients
Grill kebabs for 10–12 minutes, turning occasionally
Brush with pineapple-BBQ sauce during the last 2 minutes of grilling

Notes

Use fresh pineapple for brighter flavor if possible
Submerge wooden skewers in water for 20 minutes before grilling to prevent burning
For sturdier veggie hold, thread in alternating solid (chicken) and soft (pineapple) sections
Let kebabs rest 2 minutes before serving
