1 lb (450g) Ground Beef (80/20)
6 small flour tortillas
1/2 cup (60g) sharp cheddar cheese, shredded
1/4 cup iceberg lettuce, shredded
2 tbsp burger sauce (mayo-based)
Kosher salt to taste
Black pepper to taste

Instructions

Divide the ground beef into six equal, loosely packed spheres.
Place a sphere of beef onto a flour tortilla and press down firmly to spread it into a very thin, even layer covering the surface of the tortilla.
Season the meat side with salt and pepper.
Heat a cast iron skillet over medium-high heat (aim for 400°F).
Place the taco meat-side down into the hot skillet.
Sear for approximately 2-3 minutes until the meat develops a deep brown, crispy crust.
Flip the taco over onto the tortilla side to lightly toast the bread.
Immediately sprinkle cheddar cheese on the meat and allow it to melt.
Remove from heat and garnish with shredded lettuce and a swirl of burger sauce.

Notes

Use a heavy press or the bottom of another skillet to ensure the meat is pressed paper-thin for optimal crisping. Ensure your skillet is hot enough before placing the meat down to avoid steaming. Serve immediately for the best texture contrast.
