Chicken breast strips (boneless, skinless)
2 lbs (900g), cut into 1/4-inch thick strips
Bell peppers (red, green, yellow)
2 lbs (900g), sliced into 1-inch strips
Onion (yellow or red)
1 large, sliced
Olive oil
2 tablespoons
Fajita seasoning (store-bought) or homemade mix
2 tablespoons (contains chili powder, ground cumin, garlic powder, onion powder, salt, and paprika)
Lime wedges, for serving
Warm tortillas (flour or corn), for serving

Instructions

Preheat the air fryer to 400°F (200°C) and lightly spray the basket with non-stick spray or line with parchment paper.
In a large bowl, toss chicken strips with olive oil and half of the fajita seasoning until evenly coated.
Add bell peppers and onion to the bowl, toss with remaining fajita seasoning, and mix well to combine.
Arrange the chicken and vegetables in a single layer in the air fryer basket without overcrowding.
Air fry at 400°F for 10–12 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender with charred edges.
Serve warm with lime wedges and tortillas. Squeeze lime juice over the fajitas before serving.

Notes

Cut chicken and vegetables into uniform sizes for even cooking. Use skinless thighs for extra juiciness if desired.
For added flavor, serve with guacamole, salsa, or avocado crema.
Substitute zucchini or eggplant for bell peppers as an alternative vegetable.
