Ingredients

Scale

1 lb (450g) lean ground beef
1 packet taco seasoning
8 oz (225g) rotini pasta
2 cups (475ml) low-sodium beef broth
1 cup (240ml) mild or medium salsa

Instructions

Place a large deep-sided skillet or Dutch oven over medium-high heat.
Add the ground beef to the pan and cook, breaking it apart with a spoon until completely browned.
Drain any excess grease if desired.
Sprinkle the taco seasoning over the beef and stir for 30 seconds to toast the spices.
Add the dry rotini, beef broth, and salsa, scraping the bottom of the pan to release any browned bits.
Bring the mixture to a gentle boil, then reduce heat to low and cover.
Simmer for about 10-12 minutes, or until the pasta is al dente and the liquid has reduced into a thick, creamy sauce.
Remove from heat, stir to combine well, and serve immediately.

Notes

Ensure your taco seasoning is flour-free or gluten-free if needed. You can garnish with fresh cilantro, shredded cheddar cheese, or diced tomatoes if desired. Store leftovers in an airtight container for up to 3 days.
