A quick, hearty stir-fry combining ground beef, cabbage, soy sauce, ginger, and sesame oil for balanced protein and crunch under 20 minutes.

Ingredients

Ground beef
1 lb (450g), 85% lean
Shredded cabbage
4 cups (100g), red or green
Soy sauce
2 tbsp (30ml), low-sodium
Ginger, minced
1 tbsp (10g), fresh
Sesame oil
1/2 tsp (2.5ml)

Instructions

Trim excess fat from ground beef.
Shred cabbage with mandoline for 2mm slices.
Measure and set out soy sauce in microwave-safe pourer.
Slice ginger on mandoline into 0.25mm ribbons.
Heat cast iron skillet to 325°F (160°C), swirl in 1 tbsp beef fat.
Add beef in single layer, crumble into 1/2″ pieces, cook 2 minutes.
Drain excess fat, return 2 tbsp fat to pan, add cabbage.

Notes

Cabbage temperature cycling prevents sogginess.
Ginger releases pungent notes at 300°F;
sesame oil finishes last for toasted flavor.
