2 lbs (900g) Chuck Roast
1 packet Taco Seasoning
1/2 cup (120ml) Low-sodium beef broth
2 strips Beef Bacon, crisped and crumbled
8 small Taco Tortillas
1/2 cup (60g) Shredded cheddar or Monterey Jack cheese

Instructions

Trim excessive fat from the exterior of the 2 lbs chuck roast to ensure an even cook.
Crisp the beef bacon in a pan, crumble it, and set it aside.
Place the beef roast into the crockpot.
Sprinkle the taco seasoning evenly over the meat.
Pour the beef broth around the sides of the roast.
Sprinkle the crumbled beef bacon over the top of the beef.
Cover and cook on low for 8 hours.
Once the cooking cycle is complete, shred the beef using two forks directly in the crockpot to incorporate the juices.
Serve the shredded beef in warm taco tortillas, topped with shredded cheese.

Notes

Ensure you trim the fat cap on the chuck roast to avoid an oily finished product. For extra texture, you can briefly warm the tortillas in a dry skillet before serving. Store leftovers in an airtight container for up to 3 days.
