1.5 lbs (680g) Chicken Breasts, cubed into 1-inch pieces
2 cups (400g) White Rice, cooked
2 tbsp (8g) Fresh Cilantro, minced
1 tbsp (15ml) Fresh Lime Juice
1/2 cup (75g) Corn, thawed or steamed
2 tbsp Olive Oil
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Garlic Powder

Instructions

Heat 1 tbsp of olive oil in a heavy-bottomed skillet over medium-high heat.
Season cubed chicken with salt, pepper, and garlic powder.
Sear the chicken in batches for 5-6 minutes until golden brown and cooked through, ensuring not to crowd the pan.
Remove chicken from heat and set aside.
In a large bowl, combine warm cooked white rice with lime juice, minced cilantro, and corn.
Stir well to ensure the grains are coated and retain flavor.
Divide the lime rice into four meal prep containers.
Top each container with a portion of the seared chicken.
Allow to cool completely before covering and refrigerating.

Notes

Store in airtight containers for up to 4 days. Always ensure the chicken is cooled before sealing to prevent excess moisture buildup. For best results, use fresh lime juice instead of bottled concentrate.
