This Crockpot Honey Garlic Chicken is the ultimate set-and-forget dinner, perfect for busy family schedules. By using the slow cooker, tender boneless chicken thighs are gently simmered in a savory-sweet glaze of honey, soy sauce, and aromatic garlic. The low-heat method ensures the chicken stays succulent, while a quick final reduction creates a glossy, sticky coating that perfectly adheres to the meat. It is a healthy, high-protein meal that avoids the need for heavy frying and keeps your kitchen cool during the summer months.

Ingredients

Scale

2 lbs (900g) boneless, skinless chicken thighs
1/2 cup (120ml) honey
1/3 cup (80ml) low-sodium soy sauce
4 cloves garlic, finely minced
1 tbsp apple cider vinegar
1 tbsp cornstarch

Instructions

Trim any excess fat from the chicken thighs and place them into the slow cooker.
In a small bowl, whisk together the honey, soy sauce, minced garlic, and apple cider vinegar.
Pour the honey-garlic sauce over the chicken thighs, ensuring they are well coated.
Cover the slow cooker and cook on low for 4 hours.
Once finished, remove the chicken and whisk the cornstarch into the remaining sauce in the crockpot to thicken it into a glaze.
Return the chicken to the pot to coat it in the thickened sauce before serving.

Notes

Serve over steamed brown rice or alongside roasted vegetables. Store leftovers in an airtight container for up to 3 days in the refrigerator.
