2 lbs (900g) boneless skinless chicken breasts
1 cup (240ml) high-quality BBQ sauce
1/2 medium yellow onion, sliced
2 tbsp (30ml) apple cider vinegar
1 tsp (5g) smoked paprika

Instructions

Place the sliced yellow onion at the bottom of the slow cooker pot.
Arrange the chicken breasts on top of the onion slices.
In a small bowl, whisk together the BBQ sauce, apple cider vinegar, and smoked paprika.
Pour the sauce mixture evenly over the chicken breasts.
Cover the crockpot and cook on low heat for 4 to 6 hours.
Once cooked, remove the chicken and use two forks to shred the meat on a clean surface.
Return the shredded chicken to the crockpot and toss with the cooking juices until well combined.

Notes

Ensure you do not overcook the chicken beyond 6 hours to keep the meat from becoming dry. If you prefer a thicker sauce, you can remove the chicken and simmer the remaining liquid in the pot on high for 15 minutes before mixing it back with the shredded meat. Store leftovers in an airtight container in the refrigerator for up to 3 days.
