1.5 lbs Chicken Thighs (bone-in, skin-on recommended)
1/4 cup Unsalted Butter
3 cloves Garlic, minced
1/2 cup Low-Sodium Chicken Broth
2 tablespoons Fresh Lemon Juice
1 teaspoon Dried Oregano
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
Pat the chicken thighs dry with paper towels and season them with salt and pepper. Place the chicken thighs in the insert of your slow cooker.
In a small bowl, melt the butter. Stir in the minced garlic, chicken broth, lemon juice, dried oregano, salt, and pepper. Pour this mixture evenly over the chicken thighs.
Cover and cook on Low for 4-5 hours, or until the chicken is cooked through and tender.
Serve the chicken thighs with the sauce spooned over them.
For a thicker sauce, you can remove the chicken from the slow cooker and whisk 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water into the remaining liquid. Cook on high for another 15-20 minutes until thickened.
Boneless, skinless chicken thighs can be used but may cook faster, so reduce cooking time as needed.
