Panko breadcrumbs, 1 cup (120g)
Flour (all-purpose), 1/2 cup (60g)
Eggs, 2 large
Honey, 1/4 cup (60g)
Hot sauce, 2 tbsp (30ml)
Salt, 1 tsp

Instructions

Set thermometer to 350°F for temperature monitoring
Portion ingredients into three shallow dishes (flour, eggs, panko)
Season chicken liberally with salt
Coat tenders in flour, shaking off excess
Dip in whisked eggs until saturated
Press into panko for uniform coverage
Heat non-stick pan until oil reaches 350°F
Cook chicken 3-4 minutes per side until golden
Remove and prepare sauce in same pan
Simmer honey and hot sauce 2-3 minutes until syrupy
