A comforting and nutrient-dense meal that pairs crispy roasted golden potatoes with savory taco-spiced ground beef. This dish expertly balances textures by combining the hearty crunch of roasted potatoes with the rich umami of seared beef and molten cheddar cheese. Finished with a touch of tangy salsa to cut through the richness, it’s a perfect restaurant-quality dinner that comes together easily in your own kitchen using simple, wholesome ingredients.
1 lb (450g) Ground Beef (85/15 ratio)
3 medium Yukon Gold potatoes
1 packet Taco Seasoning
1 cup Cheddar cheese, freshly shredded
1/2 cup Salsa
2 tbsp Olive oil
Salt and pepper to taste
Preheat oven to 400°F (200°C).
Dice potatoes into bite-sized cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
Roast potatoes for 25-30 minutes until golden and crispy.
While potatoes roast, heat a skillet over medium-high heat and brown the ground beef thoroughly to trigger the Maillard reaction.
Drain excess fat, add taco seasoning with a splash of water, and simmer briefly until sauce thickens.
Once potatoes are crispy, divide into bowls and top with the seasoned ground beef.
Sprinkle shredded cheddar cheese over the beef and place under the oven broiler for 1-2 minutes until molten and golden.
Top each bowl with a spoonful of salsa and serve immediately.
Use freshly shredded cheese for the best melt quality. Substitute smoked paprika for chili powder in your seasoning blend for a deeper, more nuanced flavor. Avocado oil is an excellent alternative to olive oil if you prefer a higher smoke point.
