1 lb (450g) Ground Beef (85/15)
2 cups (300g) Yukon Gold potatoes, pre-cooked and cubed
1/2 medium yellow onion, finely diced
1 cup (110g) cheddar cheese, freshly shredded
1 tsp (3g) garlic powder
1 tsp smoked paprika
1 tbsp olive oil
Salt and black pepper to taste

Instructions

Heat the olive oil in a large skillet over medium-high heat.
Add the ground beef and diced onion to the pan, breaking up the beef with a spatula until browned and the onion is translucent.
Drain excess fat if necessary, keeping a small amount for flavor.
Stir in the pre-cooked potato cubes, garlic powder, and smoked paprika, tossing to coat evenly.
Continue sautéing for 5-7 minutes until the potatoes develop a light golden crust.
Remove the skillet from the heat source to prevent the cheese from splitting.
Sprinkle the shredded cheddar cheese over the top and cover the pan for 1-2 minutes until melted.
Season with salt and pepper to taste before serving immediately.

Notes

Using pre-cooked, cooled potatoes is essential to prevent them from turning into mash during the sauté. Freshly shredded cheese is recommended over pre-packaged shreds for a smoother melt, as pre-packaged cheese contains anti-caking agents.
