Chicken breast
450g (1 lb), cut into 2cm cubes
Mayo
5 tbsp (full fat for richest flavor)
Sweet chili sauce
4 tbsp (available in Asian markets)
Sriracha
2 tbsp (adjust to taste)
Skewers
8 wooden (pre-soaked for at least 30 minutes) or metal

Instructions

Cut chicken breast into 2cm cubes for even cooking.
In a large bowl, combine mayonnaise, sweet chili sauce, and sriracha to create the marinade.
Add the chicken to the marinade, ensuring each piece is coated. Marinate for at least 30 minutes.
Thread the chicken onto pre-soaked wooden skewers, leaving a 1cm gap between each piece for even cooking.
Preheat grill to medium-high heat (200°C/400°F) or air fryer to 200°C (400°F).
Grill skewers for 5–7 minutes per side until juices run clear (internal temp 74°C/165°F) or air fry for 8–10 minutes total, shaking halfway for even browning.
Rest the skewers for 5 minutes before serving to retain juices.
Serve immediately with remaining marinade as a dipping sauce.
